BACKGROUND
The baking industry in Vietnam has a fragmented and weak value chain. This is largely because there is a dearth for skilled workers across this segment and poor interest among Vietnamese to pursue a career in this sector. Craft bakeries come under pressure from industrial players, in-store bakers and bakery chains as they lack expertise and are unable to adapt their production to the evolving taste of consumers. Sticking to traditional “banh mi” production does not enable craft bakeries to create sufficient value to sustain their business and develop their sales. Existing baking courses and classes are often part of the larger culinary class and tend to equip the trainee with basic baking skills only and not an in-depth understanding of the science of baking, sensory analysis, and understanding of consumer tastes and local markets. This necessities the need to relook at the baking vocation in terms of learning the science of baking, understanding latest trends, consumption patterns, and the employment and entrepreneurial opportunities it can provide.
OBJECTIVE
Develop the Vietnamese baking trade and improve its image by establishing a vocational training centre in Ho Chi Minh City that offers specialised skills training for promoting modern baking techniques
